I too live in a no Pixel country and have to import 😄. I used GOS first on a 4a and now on a 6a. Never thought either lacked in touch response. If you're using a screen protector, there is a setting to increase touch sensitivity to compensate. Settings>Display>Increase Touch Sensitivity. As far as parts GOS takes out, I'm not sure I follow. GOS is about as close to pure AOSP as it gets. By default Google Play services are not installed. But they can be added with a single tap and run in sandboxed mode. I have a bunch of local banking apps with Play services dependecies, and all work without issue. As far as CAD, DAW, not sure; that's out of my field.
