In Oz at least, businesses are required by law to provide a tax receipt on request (or by default). If you pay by card at the counter they are also required to provide a transaction receipt.
You could try pointing that out to them if you are in a country with such consumer protections.
A lower-friction solution might be to provide fake details, making it clear that this is a workaround for their apparently inflexible system.
