I have used those methods too, especially on kids' phones. One issue is that you have to leave the bootloader unlocked with /e/OS, which is not secure. As second is that it's not entirely clear what is or what isn't happening with Google services on /e/OS; not technical enough to understand. My own phone is GrapheneOS atm.
