Extra virgin olive oil isn’t a refined industrial oil. It’s cold pressed and naturally rich in polyphenols and vitamin E, which protect it from oxidation, not accelerate it.

It’s also mostly monounsaturated fat (oleic acid), which is far more stable than the polyunsaturated fats in seed oils. Those are the ones that oxidize easily. Olive oil doesn’t behave the same way.

High quality EVOO stored properly stays stable.

Whole olives are great. No disagreement there. But properly sourced, fresh extra virgin olive oil is one of the most stable and well studied fats you can use.
