I am making Braised Fennel with Capers and Olives - it is simmering now in its final stages.

I used what I had - made 1/2 the recipe with 2 fennel, used my thyme and orange etc mix instead of thyme, my nasturtium capers for capers, and tomatoes from the freezer. It will be a creamy goat cheese instead of ricotta as that is what my naturapath (reluctantly) allows me to feed my cheese addiction with. And my preserved lemons instead of lemon rind.

Yum yum yum. Tasting good already.
