Volatility is also the mechanism. It's what enables real-time price discovery across the world with no one smoothing it out. You can't have decentralized, permissionless price discovery AND low volatility — they're in tension by design.
The complaint about volatility is really a complaint about what Bitcoin *is*. Which is fine, but at least be honest about the tradeoff you're asking for.
