almost every place I've worked has had one of these clauses and I've never heard of a single case of it being actually used, even in a few rare cases where employee projects outside of work became a point of contention. I get the feeling that the clauses are a sort of legal incantation or meme, where it's only there because other orgs do it ("it's standard boilerplate") and not because they're useful or fair.
