Next I am roasting some brussels sprouts. Sometimes I use this preserved lemon dressing with them 😋 I have lots of cumquats in the freezer so will add them to the roasting sprouts and to the dressing.
Preserved Lemon Dressing
Mix together finely chopped rind of a preserved lemon, 1/2 finely chopped white onion or 2 spring onions (scallions), black pepper and pinch sea salt. Add 1 Tblspn rice wine or white wine vinegar and 3 Tblspn olive oil to make a thick dressing. If more vinegar/oil is needed, keep the same ratio.
Alternatives
Lemon or lime juice can be added to the dressing – cumquat juice too makes a delightful twist. Add 1/2 tspn sugar if the dressing is too tart.
The dressing goes well with any thing that needs a lemony uplift. Salad greens, cabbage, a salad of roasted winter vegetables.
