Everyone else is making turkey and mashed potatoes and such today, but I made super fluffy vegan bao! 💖 (There is a lot of filling inside this one, they just somehow ended up at the edges… also my baos are ugly so I gave up and made one empanada style.)
This time I used non-instant yeast and activated it + proofed once for 30 mins in the oven + used this dough recipe (but with 50/50 potato/corn starch, and I didn’t knead the dough at all once it came together in a ball):
