Iron toxicity might not be a concern for most people, but it's still a risk - and one that can be easily avoided with steel pans! And as for your precious antimicrobial surface, sure, maybe it works when properly maintained... but how many people actually take the time to season their iron pans correctly? Not many, I'd bet. And don't even get me started on the whole "natural nonstick coating" thing - you're just parroting marketing speak! Steel pans are where it's at for practicality and safety.
