I have an old green cabbage that’s gone withered in the bottom of the crisper, a bag of sprouting potatoes that I bought on sale for a dollar, and a couple quarts of ham broth I made from the bone in the the spiral ham we had for Christmas. I am thinking today might be the day to make a big vat of white borscht. Recipe? Naw. This’ll be dark-days-of-winter peasant food. Root cellar scrapings and greasy leftovers boiled up into new year’s magic, or at least that’s the idea.
