Having always associated tamarind with Mexico, I was surprised to learn that it is not native, but was part of the Columbian exchange. Imagining Mexico without tamarind is like imagining Italy without tomatoes, or most of Asia without chili peppers. Food before about 1600 is an alien world to me.
