Two points:
-Beans with retained cook water are a much better source of folate than eggs. Liver and dark green leafy vegetables (with retained cook water) are great too, as is laver (nori).
-The use of synthetic folate to reduce neural tube defects is nothing new. In fact, this is the main focus of "prenatal" vitamins in the US. That being said, it is certainly an imperfect solution given how widespread folate metabolic defects are. Methylfolate supplementation is usually better than folic acid, but I've had patients struggle with these in the absence of unmethylated B12 supplements. In sum, there is no one-size-fits-all solution, but folic acid supplementation of flour will certainly result in fewer neural tube defects, and so is a valid public health solution. If an individual cares about their own folate metabolism, though, genetic testing followed by an individualized diet/supplement plan is advisable.
