Circling back to this. I don't know that I agree with this analogy, but I credit you for an analogy that provokes useful thinking and discussion. I see two broad perspectives.
One is that LLMs are productivity tools for doing roughly the same job. The way I would use your analogy is if programmers had quit their jibs in the 2000s because the complexity of launching a new app had fallen by 10x or more thanks to tooling like Ruby, Rails, JavaScript, and web browsers as a platform.
