ESL teacher here: "by hand" is the expression we use when it's not made by a machine. Sometimes we have these set phrases/idioms and there's real no reason they are the way they are, but to say something else sounds "wrong" to native speakers (to the extent that anything in language is "wrong"...if no native speaker would say this, then it's not correct. If there's a dialect that uses it, then it's correct in that dialect.)
