Key Lime Pie Filling 🍋

2 Cups Whole Milk
1/2 Heavy Cream
1 teaspoon vanilla
1/2 cup white sugar
1/4 cup cornstarch
4 egg yolks
1/3 cup of fresh squeezed lime juice
1 tablespoon zest of lime
2 tablespoons room temp butter

•Pour milk, cream, sugar & vanilla into to medium pot on low heat
•Stir until sugar is dissolved
•Bring to low boil

•Mix corn starch with egg yolks in separate bowl

•Temper cornstarch mixture by slowly stirring in a 1/2 cup of hot milk mixture

•Watch milk mixture for first hints of boil and keep stirring
•Once milk mixture just starts to boil, pour the tempered cornstarch mix into the milk mixture
•Stir vigorously as the mixture thickens and turns into a custard
•Turn off heat
•Stir in butter

•As mix begins to cool, vigorously stir in lime juice and zest to prevent any curdling

•Pour custard into pie crust
•Cover with plastic wrap to prevent a skin forming

•Refrigerate until custard sets

•Decorate with whipped cream at time of serving
