In Windows 11, you can press the Windows key, then down arrow, to access a list of pinned apps. Right click (shift-f10) for options including unpinning. I just discovered a couple hotkeys for this list:
* alt-shift-left/right: move an app left or right
* ctrl-shift-left/right: make a folder with the selected app and the app immediately to its left or right. Enter opens the folder, then use the same keystrokes to move apps out of the folder to get rid of it.
