Because the hard truth is, for most average people, buying and holding bitcoin and holding your own keys is far too complicated and requires a learning curve most people don't want to bother with.
Most people just want "easy" without the need to start learning about a whole new technology. A lot of people barely know how to use their cell phones let alone learning how to buy bitcoin, setting up a hardware wallet and learning all the aspects of hodling.
