I really am trying to minimize use of aluminum foil and plastic. So I bought 'lots of glass & ceramic storage containers & use parchment paper to line baking pans. But, when it comes to making baby back ribs, I MUST use heavy-duty foil to wrap them after I've put on a dry rub. They then slow roast in the foil atop parchment paper on a sheet pan in the oven for up to 2 hours at 250° F before I slather on homemade BBQ sauce & put them on the grill for an another 6-8 mins. Foil is still invaluable.
