There should be a directory like $HOME/.config/DeltaChat where the actual profile data resides (not sure it's that location for all installs). If you remove it then you get fresh state. Also, you can just remove a profile from the UI and create a new one, without hunting for file-system locations. Please refer to https://support.delta.chat for further questions or suggestions.
