An emulsifier is a liquid with an oil bonding molecular structure on one end, and a water bonding molecular structure on the other. i.e, It can bind oils to water or water soluble substances. Extra virgin olive oil is a natural emulsifier, which is why it’s used in good Caesar dressing, to bind the vinegar and lemon juice to the oil. But it can also be used to the same effect in making body butters. A hand blender works well.
