It's not that cooking makes them bad exactly. Cooking depletes the nutrients in it. Cooking twice means it probably has a lot of the benefits destroyed from the cooking. I'm not sure if the guy is right at all, that's would just be my theory on what cooking them does.
On the hand, spinach gets more bioavailable when heated so who knows.
It's weird that peanut allergies are so prevalent when just a couple decades ago it wasn't a thing.
