After fiddling with a Mikrotik HexS for a while, I decided to get a Ubiquiti Cloud Gateway Fiber, which actually has the processing guts to effectively route my 1.5Gbps service.
I wasn't successful getting the HexS to run the SFP ONT in 2.5G mode, but I think I would be eventually.
I expected the CGF would be easier, but I was wrong. It did manage to connect once to my ISP, but quickly dropped it. Generally no light on the SFP+ slot. The management approach is a mess.
