I couldn’t have described it much better myself. The vinegar is the trick, though now I’m inspired to try lemon juice. After I take them out of the water, I place them on a paper towel to absorb the excess water, then season with salt and pepper and serve them on toast with avocado and feta or shredded cheddar cheese. I don’t have the patience to make Hollandaise sauce.
