I don’t know what tools you have, but in start9 it’s easy to set your own relay and they have various file systems to help with hosting your content. You may just want one with a lot of memory (4TB ssd) if you’re going to self host a lot of video content.
May be worth hiring someone to get it done right the first time if you’re not a techie. You could figure it out, maybe someone will have the time to walk you through it and be tech support for free, but then if you screw up you risk losing it all - again, just like with Bitcoin, real ownership comes at the cost of spending time and understanding best practices and the corresponding tradeoffs.
I don’t have time to do this all with you, unfortunately and sorry, but happy to periodically respond to questions you have. I’m no expert either, so take what I say cautiously, I’m just speaking abstractly and directionally.
