Where do you find the how and why we should do "Church" in the epistles?

I'm going pretty deep into Hebrews right now, and, like the rest of Paul's writings, "Church" seems to refer to the body of believers, mentions of (parts of) physical buildings are symbolic of people, etc...

And Paul is kinda the writer that goes hardest of all against the whole hypocritical, carnally-minded Mosaic rituals, given his history 😉
