When is cinnamon not cinnamon? When it's cassia!

Cassia is sourced mainly from Indonesia and has a strong, bitter flavour. It is supplied in quills of a single, thick scraping- but it's sold in most groceries as 'cinnamon.'

Ceylon cinnamon is sourced from Sri Lanka. It is known as 'true' cinnamon and has a mild, floral scent and flavour. It is supplied in quills of many thin layers. Chances are most have only encountered cassia 'cinnamon.'

Find some Ceylon cinnamon, it's worth the effort!
