Because Mary, albeit immaculate, is of human nature alone. Hence, she is finite and temporal. On the other hand, Christ alone is both of human and divine nature. Hence, he is infinite and eternal. Therefore being of human nature while also being eternal (i.e. unconstrained by space and time), Christ was the only one who could have satisfied the price for not just the sins of one man but all mankind forever.
