In the past century wheat has been engineered to contain more and more gluten as it makes dough easier to work. And yeast has been replaced with chemical agents that turn into CO2 when heated. And now, for some weird reason, people have difficulty digesting the stuff.

For real, studies have shown "ancient" breeds* of wheat causes issues to wayy fewer people!.

* don't think it's the right word for plants, but it refuses to come to mind
