We've insulated our log plank house with wood wool. Initially, we wanted to take sheep wool. But couldn't get a hold of it, when it was needed. Instead, the wood wool (I don't know from which plant, but it's an organic fibre) has much better insulation properties and the moisture/mold problem is solved with calculating condensation points. In a log plank house he entire wall is breathable. So all the humidity collected in the walls will evaporate during the course of the day.
