This batch has got a nice kick! I usually make kimchi and sauerkraut in 4L jars but this one has a much wider mouth so I was able to fit the weights in without having to use anything else (cabbage leaves). The lid isn't air tight so it's actually a much better set up. I have been doing a four day fermentation for the last couple of batches but this one hung out for 7. It's lovely.
