I organized my spreadsheet in a way that a single row is a single day. A day can contain mutiple spendings from different categories. I use formulas to get daily averages for given periods etc but I don't it just seems it takes too much time to do the same stuff over and over again. Your approach with templates and having different sheets for different months would make it easier to eg. look at last week, compare months etc but I still think this could be easier with a proper app.
