We love spinach in shoulder season. Plant in high tunnel in autumn after we pull tomatoes and peppers and harvest Jan-March with three feet of snow outside! No bugs at all that time of year and winter spinach is SO sweet! A bed or two grown this way lasts us all year and doesn’t take up valuable bed space during the normal growing season.
