one of the first amusements after I came here 52 years ago was that the lecturer in Italian had obtained a research grant to investigate the ingredients in pizzas with the same names in different restaurants in Sydney. He and his eventual research student had a lovely time sampling them all. I imagine that the variation would be much greater nowadays for the reasons you outline. The first pizza I had was in Italy in 1970 and was a bit of pizza base, a sardine and a smear of tomato
