I'm so excited that you're interested in natto, because most everyone non-Japanese hates it 😂 I'm still working through propagating my store-bought packs (which is the easiest way to start if you have access to such a store), but I'll jot some notes down and send it your way once I start experimenting more.

Also, I started making tofu for the exact same reason (reducing plastic waste) so I'm very much rooting for you. Go Kat! 🙌
