Dunno about honey, but back when I caught the homemade pizza fever, I studied a ton and sugar isn't digested by yeasts. It only provides a bit of color due to the caramelising (maillard reaction and stuff).
Yep, gas ovens go for 6-700€ but, at least in Italy, they sell this kind of ovens. I have one, it works OK and the pizzas are pretty good.
It goes up to 350-380°C and they're pretty cheap
