Not sure if you would be interested but here's some suggestions:
Maps: Osmand~ and then you can add google live traffic info to it
Wallet: I feel you no solution here. Just goog old fashioned plastic cards or finding stores that take bitcoin.
Sync: Self host your things with apps like NextCloud, Syncthing, File manager just to name a few. Localsend for sending to other devices on same network. For anything else you don't want to self host, run a private space on your main profile to segregate google play store apps and use those third party easy solution apps for other needs.
Notifications: I think you can use things like NTFY. Otherwise, make sure anything you absolutely need google push notifications is on the private space I referenced before.
