the first defense can be reworked slightly.
still step behind the leg but instead of dropping to the leg to lift the assailant, throw either a high rotating elbow into them to trip them off your back step leg or throw a low elbow into the groin and follow with the high rotating elbow
as you throw the high rotating elbow you must simultaneously drop your center of gravity and shrug or push so you don't fall with them. the twist and drop gets them falling and the shrug keeps them from grabbing.
as space is created, run or grab a weapon
more advanced grapplers are well suited to do a granby roll with the principal downside of being on the ground.
