I think partly there is a lack of understanding of how mobile data networks operate. I’m not an expert on mobile networks but from what I understand the mobile data is basically tunneled to a packet gateway where it is then routed out to the Internet. A cheap travel eSIM provider is probably only going to have gateways in small number of locations, possibly only in the country they are based in, so that is where all the data will be routed through and so that is where the geolocation for the IP will be.

I think if you are going to use an eSIM for travel it’s probably best to find a reputable provider that may have a better presence in multiple countries, and run a VPN over the top of it if you are concerned about privacy.
