Nods. A lot depends on ambient temp. My timing needs to change once summer comes, or my dough is overproofed. And the dough can hold in the fridge for up to 24 hours, which helps sync to whatever schedule works.

I think a lot of folks overthink sourdough! Especially when it comes to feeding the starter. Mine thrives on neglect. LOL.
