I agree that too many manual fields would be a problem but I think some information about the stone still has to be recorded. The exact find location does not need to be public in full detail but at least the country and general area are important. Jasper for example is found all over the world. If we do not know where a specimen came from then organizing or comparing its information becomes much harder. One idea could be to give every stone its own unique ID. For example stone ID 1. Anyone who searches that ID could see where it was found and when it was found and its photos and characteristics and who currently holds it. If it is traded then the same ID continues with the stone and its history does not disappear.
